I thought I knew—but I didn’t—how to eat before I worked with Anthea. And as hyperbolic as it sounds, my life has changed from the months I spent working with her. I wasn’t trying to lose weight or figure out if I was Celiac, I just wanted to learn how to eat, and get some tools for eating at restaurants and drinking less. Now I have so much more understanding of how my body works, how to portion my plate, and most importantly, how to prioritize vegetables (though sorry Anthea, I’m not putting cauliflower rice in my smoothies lol). I recently had a physical and my doctor didn’t ask a single question about my diet or exercise, and I realized how much of my health is in my hands—and yet I had no idea what I was doing.
